Harissa Focaccia Bread

Put an ethnic twist on traditional focaccia bread with this harissa-seasoned bread recipe. Tunisian harissa seasoning gives this dense bread a spicy and robust flavor, making it perfect to serve with deli meats and cheese or to dip into a harissa-based dip or spread for more zip.

Ingredients

  • 1 teaspoon Cane Sugar
  • 1 teaspoon Sea Salt
  • 1 tablespoon active dry yeast
  • 1 cup lukewarm water
  • 2 3/4 cups all-purpose flour
  • 1 tablespoon Harissa Seasoning (+ 1 tsp.)
  • 2 tablespoons olive oil (and 1 tsp.) divided
  • 1/4 cup Parmesan cheese
  • 1/4 cup mozzarella cheese

Instructions

  • In a medium bowl, mix yeast, sugar and water. Let sit about 10 minutes, or until milky.
  • In a large bowl, mix together flour, salt and 1 tablespoon Harissa Seasoning. Create a well in the middle of the mixture.
  • Once the yeast mixture is ready, add 1 tablespoon olive oil and yeast mixture into the well. When dough has pull together, place in a bowl and add 1 tablespoon olive oil, and slightly knead into the dough (about 1 to 2 minutes). Cover dough with a damp cloth, and let rise in a warm place for at least 20 minutes.
  • Preheat oven to 450 degrees.
  • When dough is ready, knead for about a minute, and then place on a greased baking sheet. Pat into a ½-inch thick circle. Brush with 1 teaspoon olive oil, and sprinkle with 1 teaspoon Harissa Seasoning and cheeses. Pat down the cheese.
  • Bake for 15 minutes, or until golden brown. Serve warm.

Notes

Serve with your favorite deli meats and cheese for a delicious treat!

  • Baking Powder
  • Sugar
  • Sea Salt
  • Sweet Basil Leaf
  • all-purpose flour
  • unsalted butter cold and cubed
  • milk

Instructions

  • Preheat oven to 425 degrees and spray a baking sheet lightly with non-stick spray.
  • Sift flour, sugar, baking powder and salt into a large bowl. Stir in basil.
  • Blend butter into dry ingredients with a pastry blender until the mixture resembles a coarse meal. Slowly add milk, stirring to incorporate until the mixture forms a sticky dough.
  • Drop large spoonfuls (about ½ cup each) of batter onto the baking sheet. Bake for 8 to 12 minutes, until biscuits are golden brown. Remove from oven and let cool.

Mommie’s Shortcakes

I found this recipe in my Mother's recipe box. I remember her making these often when I was a child. This was always a favorite treat and we would have them topped with Strawberries.

Ingredients

  • 1/3 cup shortening
  • 3 teaspoons baking powder
  • 2 cups flour
  • 1 teaspoon salt
  • 2 tablespoons sugar
  • 3/4 cup milk

Instructions

  • Preheat oven to 350 degrees.
  • Stir together flour, sugar, baking powder and salt, then cut in shortening with pastry blender or two butter knives used in criss-cross fashion until mixture resembles fine crumbs.
  • Stir in milk until blended.
  • Turn dough onto lightly floured surface and gently smooth into a ball. Knead 20-30 times then roll out 1/2-inch thick.
  • Cut dough with floured, three-inch-round cookie cutter and place dough pieces about one inch apart on ungreased cookie sheet.
  • Bake 10-12 minutes, or until lightly browned.
  • Top shortcakes with sweetened sliced strawberries and whipped cream.

  • 1 teaspoon Baking Soda

  • 1 teaspoon Almond Extract
  • 1 teaspoon Organic Vanilla Extract
  • 1 3/4 cups unbleached flour
  • 1/3 cup rolled oats
  • 2/3 cup brown sugar
  • 1/2 cup chopped almonds
  • 1 egg plus 2 egg whites beaten
  • 1 cup mashed bananas
  • 1/4 cup oil
  • 1 teaspoon milk
  • 1 teaspoon lemon juice

Instructions

  • Preheat oven to 350 degrees.
  • Combine dry ingredients in a large bowl. Make a well in the center and set aside.
  • Combine remaining ingredients in another bowl. Mix until smooth.
  • Pour the wet ingredients into the dry and mix with a spoon until just combined. Pour into an oiled loaf pan and bake until loaf tests done, about 45 minutes.

Ingredients

  • 1/2 tsp Organic Vanilla Extract
  • 3/4 teaspoon Baking Powder
  • 1/4 teaspoon Ground Cloves
  • 3/4 teaspoon Cinnamon
  • 1/2 teaspoon Ground Nutmeg
  • 1 cup finely chopped apple
  • 1 1/4 cups unbleached flour
  • 1/2 cup canola oil
  • 2 large eggs
  • 2 teaspoons water
  • 3/4 cup honey

Instructions

  • Preheat oven to 400 degrees. Line muffin tins with paper liners.
  • Sift together flour, baking powder, cloves, cinnamon and nutmeg and set aside.
  • In another bowl combine the oil, eggs and water. Gradually add the honey and beat until thoroughly combined. Add the vanilla and gradually begin adding the dry ingredients. Mix until just combined. Do not over mix. Fold in the apples and spoon the mixture into the prepared muffin tin. Fill the cups 3/4 full.
  • Bake 20 to 25 minutes until cooked through.

Irish Soda Bread

The Irish in the Old Country make beautiful soda bread. Given a good recipe, why shouldn't the Irish-Americans make it too?
This is another recipe my mother clipped from a newspaper or magazine many years ago.

Ingredients

  • 4 cups sifted flour 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup corn oil or butter
  • 1 cup seedless raisins
  • 1 tablespoon caraway seeds
  • 1 cup buttermilk
  • 1 egg
  • Corn oil

Instructions

  • Grease 8×1-1/2 inch layer cake pan.
  • Sift together first 5 items in large bowl. Add corn oil and blend until fine crumbs form, Stir in raisins and caraway seeds. Mix buttermilk and egg together.
  • Gradually add to flour mixture, stirring until soft dough forms. Turn out onto floured board; knead lightly until smooth. Shape into ball.
  • Place in prepared pan. Flatten slightly and cut a cross on top of loaf. Brush with corn oil. Bake in 350-degree oven 50 minutes or until brown.

This sweet potato biscuits recipe was in my mother's recipe box from years ago. I don't remember her making these but they sound delicious! (Or maybe because I was such a picky eater when I was a kid I wouldn't even consider trying them!)

Ingredients

  • 2 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 tablespoons brown sugar
  • Dash of Cinnamon
  • 1/2 cup melted butter
  • 1 cup boiled peeled, mashed sweet potatoes
  • 2/3 cup buttermilk

Instructions

  • Preheat oven to 450 degrees.
  • Sift flour, baking powder, baking soda, salt, brown sugar and cinnamon and set aside.
  • Using a medium-size bowl, beat melted butter into the sweet potatoes. Add dry ingredients, stirring in a little at a time, alternating with buttermilk. Mix just well enough to moisten all ingredients. Form into a ball and turn out onto lightly floured board. Lightly pat top side with flour as well, since it is rather sticky batter.
  • Roll out to 1/2 to 3/4 -inch thickness with floured rolling pin. Cut with a floured biscuit cutter. Bake 20 to 25 minutes.

Notes

Makes 12 to 14 biscuits.

  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder

  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon ground ginger
  • 2 eggs
  • 1/2 cup oil
  • 2/3 Cup Sugar
  • 1-1/3 cups mashed cooked sweet potatoes
  • 1/2 Cup chopped nuts
  • 1/2 Cup raisins

Instructions

  • Preheat oven to 350 degrees. Grease a 9-by-5-inch loaf pan.
  • Sift together flour, baking soda, baking powder, salt, cinnamon, allspice and ginger; set aside.
  • Beat eggs; add oil, sugar and sweet potatoes, beating after each addition. Add dry ingredients, stirring well. Stir in nuts and raisins and pour into loaf pan, tapping the pan on the counter to settle the mixture.
  • Bake for 50 to 60 minutes, or until tester comes out dry. Makes 9 servings.

Maxine’s Corn Meal Yeast Rolls

These are the best Corn Meal Rolls ever! They have a delicious melt in your mouth taste. Whenever Maxine brought her rolls to parties, she would never take any back home with her. Everyone Loved them!

Ingredients

  • 1/3 Cup Cornmeal
  • 1/2 Cup Sugar
  • 2 tsp. Salt
  • 1/2 Cup Shortening
  • 2 Cups Milk
  • 1 pkg. dry yeast
  • 1/4 cup warm water
  • 2 Beaten eggs
  • 4 Cups Flour
  • Melted Butter
  • Cornmeal

Instructions

  • Cook until thick the cornmeal, sugar salt, shortening and milk (in saucepan). Cool to lukewarm. Add yeast which has been dissolved in lukewarm water, then eggs. Beat thoroughly. Add flour to form soft dough. Knead well on lightly floured surface. Place in bowl, cover, let rise, punch down. Roll out to 1″ thickness, cut with 2 1/2″ biscuit cutter. Brush with melted butter, dust with cornmeal. Place on greased cookie sheet, cover and let rise. Bake at 375 degrees for 15 minutes Yields 18 rolls.
