Tuscan Tomato Salad

Here’s an easy, elegant way to serve your bounty of tomatoes.

Ingredients

  • 1/2 teaspoon Oregano Leaf Cut & Sifted
  • 1/2 teaspoon Sweet Basil Leaf Cut & Sifted
  • 1/4 teaspoon Thyme Leaf
  • 1/4 teaspoon Sage Leaf
  • 1/4 teaspoon Garlic Granules
  • 1 pinch Black Pepper Medium Grind, Organic
  • 3 teaspoons olive oil
  • 3 thick slices bread Italian, French, or sourdough work nicely
  • 1 teaspoon red wine vinegar
  • 3 large tomatoes chopped
  • 1/2 cup cubed mozzarella cheese
  • 1/4 cup sliced black olives

Instructions

  • Brush 2 tablespoons olive oil on the bread. Sprinkle with the oregano, basil, thyme, sage, and garlic. Place on baking sheet and broil until browned. Cool, then break bread apart into bite-size pieces.
  • In a small bowl, whisk together remaining oil and vinegar.
  • In serving bowl, combine tomatoes, mozzarella, olives, and bread. Toss with oil and vinegar. Sprinkle with pepper.

Harissa Olive Salad

Traditionally used to season dips, spreads and other appetizers, Tunisian harissa seasoning is full of fiery, robust flavor. In this recipe, Greek-style olive salad gets a spicy makeover with the combination of harissa, feta cheese and red onion. To kick up the heat even more, sprinkle in more Harissa Seasoning.

Ingredients

  • 2 teaspoons Harissa Seasoning
  • 1 cup pitted and coarsely chopped black olives
  • 1 cup pitted and coarsely chopped Kalamata olives
  • 1 cup pitted and coarsely chopped green olives
  • 1/2 cup red onion finely sliced
  • 1/2 cup feta cheese crumbled
  • 1/3 cup olive oil
  • 2 teaspoons vinegar

Instructions

  • In a large mixing bowl, place olives, onion and cheese.
  • In a small bowl, whisk together oil, vinegar and Harissa Seasoning. Add to the large bowl and carefully mix together.
  • Chill for at least 1 hour before serving.
  • Add more onion for extra flavor.To kick up the heat, add more Harissa Seasoning.

Tandoori Fruit Salad

 In this recipe, fresh fruit gets an ethnic and zesty lift with a refreshing kick of peppermint. Its spicy-sweet flavor makes this salsa a wonderful dip for tortilla chips or vegetables, a spread on toasted bread, or a relish on top of baked or grilled meat.

Ingredients

  • 1 tsp Tandoori Seasoning Organic
  • 1 tsp Peppermint leaf cut and sifted
  • 1 cup ripe diced nectarines (about 1 � nectarines)
  • 1 cup ripe peeled, diced mango (about 1 mango)
  • 1 jalapeno finely chopped
  • 1/2 cup finely chopped red bell pepper
  • 1/2 cup finely chopped red onion
  • 1 lime the zest and juice of lime
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon olive oil
  • 2 teaspoons orange juice

Instructions

  • Place all chopped and diced fruits and vegetables in a bowl.
  • Place the lime zest in the mixture, and then add the lime juice. Mix in vinegar, oil, Tandoori Seasoning, orange juice and peppermint. Stir until combined. With a fork gently mash the fruit down a little.
  • Chill in the refrigerator for at least 1 hour.
  • Serve with tortilla chips, toasted bread, vegetables, or as a relish on top of baked or grilled chicken, pork or fish
