Joyce’s Berbere Soup

So, I experimented with dinner tonight. 2 chicken breasts I had to cook today. Looked in cupboards, decided can of diced tomatoes, can of cannelini beans, can of unsalted chicken broth + water, bag of frozen mixed vegetables in crock pot on high about 4-5 hours. Slightly shredded chicken, back into crock pot. Scooped a bowlful and sprinkled berbere seasoning on top. Winner, winner chicken dinner! 😁

Ingredients

  • 1 can of diced tomatoes
  • 1 can of cannelini beans try saying that fast 3 times, lol,
  • 1 can of unsalted chicken broth + water
  • 1 bag of frozen mixed vegetables
  • Berbere Seasoning to taste

Instructions

  • Put all ingredients (except Berbere) in crock pot on high about 4-5 hours. Slightly shred the chicken, put back into crock pot. (Try adding the Berbere Seasoning in 1/2 way through the cooking process if you want a more intense Ethiopian flavor.)
  • Scoop a bowlful and sprinkle berbere seasoning on top. Winner, winner chicken dinner!

Herbes De Provence Beef Stew

For a delicious addition to your Beef Stew try adding Herbes De Provence seasoning. Herbes De Provence adds a great flavor the whole family will love!

Ingredients

  • 1-1/2 pounds beef stew meat cut into 1-inch cubes
  • 1/2 teaspoon salt divided
  • 6 tablespoons all-purpose flour divided
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon canola oil
  • 3 tablespoons tomato paste
  • 2 teaspoons herbes de Provence
  • 2 garlic cloves minced
  • 2 cups dry red wine
  • 2 cups beef broth
  • 1-1/2 teaspoons minced fresh rosemary divided
  • 2 bay leaves
  • 3 cups cubed peeled potatoes
  • 3 cups coarsely chopped onions about 2 large
  • 2 cups sliced carrots
  • 2 tablespoons cold water
  • 2 tablespoons balsamic or red wine vinegar
  • 1 cup fresh or frozen peas

Instructions

  • In a small bowl, toss beef and 1/4 teaspoon salt. In a large bowl, combine 4 tablespoons flour and paprika. Add beef, a few pieces at a time, and toss to coat.
  • In a Dutch oven, brown beef in oil over medium heat. Stir in tomato paste, herbes de Provence and garlic; cook until fragrant and color starts to darken slightly. Add wine; cook until mixture just comes to a boil. Simmer until reduced by half, about 5 minutes. Stir in broth, 1 teaspoon rosemary and bay leaves. Bring to a boil. Reduce heat; cover and simmer until meat is almost tender, about 1-1/2 hours.
  • Add potatoes, onions and carrots. Cover; simmer until meat and vegetables are tender, about 30 minutes longer.
  • Discard bay leaves.
  • In a small bowl, combine remaining 1/2 teaspoon rosemary, remaining 1/4 teaspoon salt and remaining 2 tablespoon flour. Add cold water and vinegar; stir until smooth. Stir into stew. Bring to a boil; add peas. Cook, stirring, until thickened, about 2 minutes. If desired, top with additional fresh rosemary.

Ingredients

  • 1 package Simply Organic Mild Chili Seasoning Mix OR if you prefer
  • 1 package Simply Organic Spicy Chili Seasoning Mix Do NOT add both Choose Mild OR Spicy
  • 1 teaspoon olive oil
  • 1 small onion diced
  • 1 red pepper diced
  • 2 garlic cloves minced
  • 2 pounds beef cubes
  • 1/2 jalapeno pepper finely chopped
  • 3 teaspoons tomato paste
  • 2 cups beef or vegetable broth
  • 1 14 ounce can diced tomatoes
  • 2 -14 oz. cans of Kidney Beans if desired (optional)

Instructions

  • In a large pan heat, olive oil over medium heat. Add onion, peppers and garlic. Saute for about 4 minutes. Add beef cubes and cook until browned, about 3 minutes.
  • Transfer mixture to a slow cooker and add tomato paste, broth, diced tomatoes and contents of seasoning mix packet. Mix until combined.
  • Cook in slow cooker on high for 4 to 5 hours or on low for 7 to 8 hours.
  • Serve with your favorite chili toppings.

Instructions

  • In a large saucepan over medium-high heat, preheat olive oil. Add mushrooms and cook for about 4 to 6 minutes, until they release most of their liquid.
  • Stir in Umami Blend, garlic powder, onion powder and black pepper.
  • In a small bowl, whisk almond milk and tapioca flour. Add milk mixture and vegetable broth to saucepan.
  • Bring to a boil, reduce heat and cook for about 2 to 3 minutes, until soup has thickened. Add salt to taste.
  • Into a high speed blender or food processor, transfer half of the soup and pulse a few times until creamy. Pour back into saucepan, stir to combine, and serve.

Sweet Cinnamon Chili Carrot Soup

Ingredients

  • 1/2 package Simply Organic Sweet Cinnamon Chili Vegetable Seasoning Mix .71 oz.
  • 2 teaspoons oil
  • 1 pound carrots peeled and sliced
  • 2 leeks white part only, chopped
  • 4 cups vegetable broth
  • 1 can 15-ounce coconut milk
  • Greek yogurt optional

Instructions

  • Heat oil in a large pot over medium high heat. Add sliced carrots and leeks and saute for 5-8 minutes, stirring frequently.
  • Add vegetable broth and half the packet of Sweet Cinnamon Chile Crazy Awesome Veggies. Simmer for 20 minutes or until carrots are soft.
  • Stir in canned coconut milk and simmer for another 2 minutes. Use and immersion blender or carefully ladle into a blender and blend until smooth.
  • Top with a dollop of Greek yogurt.
