Parsnip and Apple Whip

Ingredients
  

  • 1 1/2 lbs. Parsnips, peeled, coarsely chopped
  • 2 Apples, peeled, cored, coarsely chopped
  • 3 TBS butter
  • 1 tsp sugar
  • 1 pinch ground cardamom
  • 1 pinch cinnamon
  • 1/4 cup sour cream
  • salt to taste
  • 1 TBS snipped fresh chives

Method
 

  1. Place parsnips in pan, cover with cold water. Bring to boil, cover, and cook until very tender. Drain, place in food processor.
  2. Melt butter in non-stick skillet. Add Apples, cook, shaking pan occasionally, 10 minutes.
  3. Add sugar, cardamom, and cinnamon, cook until apples are very soft and lightly colored.
  4. Place in food processor, add sour cream. Process until mixture is very smooth.
  5. Transfer puree' to serving bowl, season with salt and sprinkle with chives.
