Parsnip and Apple Whip
Ingredients
- 1 1/2 lbs. Parsnips, peeled, coarsely chopped
- 2 Apples, peeled, cored, coarsely chopped
- 3 TBS butter
- 1 tsp sugar
- 1 pinch ground cardamom
- 1 pinch cinnamon
- 1/4 cup sour cream
- salt to taste
- 1 TBS snipped fresh chives
Instructions
- Place parsnips in pan, cover with cold water. Bring to boil, cover, and cook until very tender. Drain, place in food processor.
- Melt butter in non-stick skillet. Add Apples, cook, shaking pan occasionally, 10 minutes.
- Add sugar, cardamom, and cinnamon, cook until apples are very soft and lightly colored.
- Place in food processor, add sour cream. Process until mixture is very smooth.
- Transfer puree' to serving bowl, season with salt and sprinkle with chives.
