Parsnip and Apple Whip

Ingredients
  

  • 1 1/2 lbs. Parsnips, peeled, coarsely chopped
  • 2 Apples, peeled, cored, coarsely chopped
  • 3 TBS butter
  • 1 tsp sugar
  • 1 pinch ground cardamom
  • 1 pinch cinnamon
  • 1/4 cup sour cream
  • salt to taste
  • 1 TBS snipped fresh chives

Instructions
 

  • Place parsnips in pan, cover with cold water. Bring to boil, cover, and cook until very tender. Drain, place in food processor.
  • Melt butter in non-stick skillet. Add Apples, cook, shaking pan occasionally, 10 minutes.
  • Add sugar, cardamom, and cinnamon, cook until apples are very soft and lightly colored.
  • Place in food processor, add sour cream. Process until mixture is very smooth.
  • Transfer puree' to serving bowl, season with salt and sprinkle with chives.
