Strawberry Preserves

This Strawberry Jam recipe was found in a clipping stored away in my mother's cedar chest. I remember Mom making her jams years ago and they were delicious! Strawberry was my favorite Jam growing up.

Ingredients
  

  • 2 quarts strawberries
  • 1 package powdered pectin
  • 1/4 cup ground and seeded lemon about 1 medium
  • 1/4 cup water
  • 6 1/2 cups sugar

Method
 

  1. Combine all ingredients, except sugar, in a large saucepot. Bring to a rolling boil, stirring gently. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring frequently. Remove from heat. Skim foam if necessary. Stir gently 3 minutes to distribute fruit. Ladle hot preserves into hot jars, leaving 1/4-inch headspace. Adjust two-piece caps. Process 15 minutes in a boiling water canner. Yield: about 7 half-pints.
