Sweet Potato Bread
This is another recipe that my mother clipped from a newspaper many years ago.

- 2 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon Salt
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon ground ginger
- 2 eggs
- 1/2 cup oil
- 2/3 Cup Sugar
- 1-1/3 cups mashed cooked sweet potatoes
- 1/2 Cup chopped nuts
- 1/2 Cup raisins
Preheat oven to 350 degrees. Grease a 9-by-5-inch loaf pan.
Sift together flour, baking soda, baking powder, salt, cinnamon, allspice and ginger; set aside.
Beat eggs; add oil, sugar and sweet potatoes, beating after each addition. Add dry ingredients, stirring well. Stir in nuts and raisins and pour into loaf pan, tapping the pan on the counter to settle the mixture.
Bake for 50 to 60 minutes, or until tester comes out dry. Makes 9 servings.
