Tennessee Muffins

This recipe is an actual clipping from an old newspaper that was saved by my mother.  I do not claim ownership and simply want to share some of the lost and forgotten recipes from the old days, back when eating was clean, pure, and not full of chemical preservatives.

Ingredients
  

  • 2 Cups Cornmeal
  • 2 Cups White All-Purpose Flour
  • 1 TBS sugar (more or less)
  • 1/2 tsp Salt
  • 3 tsp baking powder
  • 2 TBS butter
  • 2 eggs
  • 1 pint milk

Instructions
 

  • Sift together Cornmeal, flour, Sugar, Salt, and Baking Powder,
  • Add Butter, beaten eggs and milk.
  • Mix till consistency of cupcake batter.
  • Fill muffin tins, greased well, 2/3 full. Bake at 375 degrees.
