Garlic Red-Jacket Mashed Potatoes
Ingredients
- 6 Red-skinned boiling potatoes, unpeeled. Cut into quarters.
- 2 TBS Olive Oil
- 2 cloves garlic, finely minced
- 1/2 cup sour cream
- 1/2 cup milk, warmed
- 1 TBS Apple Cider Vinegar
- Salt and Pepper to taste
Instructions
- Place quartered potatoes in saucepan, cover with cold water, bring to boil. Reduce heat, cook until tender, drain
- Heat Olive oil, Add garlic, cook, stirring occasionally, until pale golden.
- Place garlic in mixing bowl, add drained potatoes, Mash potatoes and garlic with potato masher. Add Sour cream.
- Slowly pour in warm milk, continue to mash. Add vinegar, season with salt and pepper.
