Garlic Red-Jacket Mashed Potatoes

Ingredients
  

  • 6 Red-skinned boiling potatoes, unpeeled. Cut into quarters.
  • 2 TBS Olive Oil
  • 2 cloves garlic, finely minced
  • 1/2 cup sour cream
  • 1/2 cup milk, warmed
  • 1 TBS Apple Cider Vinegar
  • Salt and Pepper to taste

Instructions
 

  • Place quartered potatoes in saucepan, cover with cold water, bring to boil. Reduce heat, cook until tender, drain
  • Heat Olive oil, Add garlic, cook, stirring occasionally, until pale golden.
  • Place garlic in mixing bowl, add drained potatoes, Mash potatoes and garlic with potato masher. Add Sour cream.
  • Slowly pour in warm milk, continue to mash. Add vinegar, season with salt and pepper.
