Garlic Red-Jacket Mashed Potatoes

Ingredients
  

  • 6 Red-skinned boiling potatoes, unpeeled. Cut into quarters.
  • 2 TBS Olive Oil
  • 2 cloves garlic, finely minced
  • 1/2 cup sour cream
  • 1/2 cup milk, warmed
  • 1 TBS Apple Cider Vinegar
  • Salt and Pepper to taste

Method
 

  1. Place quartered potatoes in saucepan, cover with cold water, bring to boil. Reduce heat, cook until tender, drain
  2. Heat Olive oil, Add garlic, cook, stirring occasionally, until pale golden.
  3. Place garlic in mixing bowl, add drained potatoes, Mash potatoes and garlic with potato masher. Add Sour cream.
  4. Slowly pour in warm milk, continue to mash. Add vinegar, season with salt and pepper.
