HERBED ROAST BEEF AND VEGETABLES

Ingredients
  

  • 3 lbs. beef round tip or eye of round roast
  • 1 TBS Salt-free Citrus Seasoning
  • 1 TBS Spectacular Spaghetti seasoning
  • 1 lb. new red potatoes quartered
  • 1 large Sweet Potato cut up
  • 1/2 lb. carrots cut in strips
  • 2 TBS. olive oil or butter
  • 4 small onions halved

Method
 

  1. Preheat oven to 425 degrees. In a measuring cup combine seasonings and olive oil or melted butter; mix to blend. Place beef roast in a shallow roasting pan and arrange carrots, potatoes, sweet potato, and onions around roast. Pour Oil and Seasoning mixture over vegetables and meat. Try to distribute over roast and vegetables evenly.
  2. Cook Roast beef and vegetables covered with aluminum foil in a 425-degree oven for approximately 1 hour. After one hour remove foil cover and continue to roast until temperature reaches 135 degrees for rare or 155 degrees for medium rare to medium. Remove roast from oven and let stand for 10 minutes.
